Mix all ingredients for pancakes together in a bowl. Stir to mix well.
Heat a little butter in a non stick skillet and drop about 1/4 cup of the batter for each pancake, lightly pressing down with a spatula to flatten. Cook for 3-4 minutes on each side over medium heat until golden brown and crispy.
Spread a spoonful of cream cheese on top of each pancake. Top with a few avocado slices and a spoon of salsa.
Serve with a fried egg on the side.
